#30MealsAtHome - Day 16 - Sick Day

Our kids are feeling under the weather, so they had some chicken noodle soup, recycled from last night's leftovers.

My husband and I had a Honey Dijon Baked Salmon with a chopped garden salad.  The recipe for the salmon is below:

Honey Dijon Baked Salmon
Prep time: 10 minutes, Cooking time: 15 minutes

2 filets Atlantic Salmon
1 teaspoon garlic, minced
1 tablespoon reduced fat mayonnaise
1 teaspoon Dijon Mustard
1/2 teaspoon honey (We used Agave syrup instead)
1/2 teaspoon dried dill
salt and pepper to taste
2 teaspoons grated Parmesan cheese

  1. Preheat oven to 350 degrees F.
  2. On a foil lined baking sheet, lay out the salmon filets and season with some salt and pepper.
  3. In a small bowl, mix together the garlic, mayonnaise, mustard, honey, and dill.  This will be your topping for the fish.
  4. Slather a generous layer of the topping over the each filet.
  5. Sprinkle 1 teaspoon of Parmesan cheese on each filet.
  6. Bake for about 12 to 15 minutes.
  7. Serve with a garden salad on the side.

We used Ken's Lite Raspberry Walnut dressing on our salad.
