#30MealsAtHome Challenge - Day 2

We had a lot of leftover barbecue last night, so I rehashed it into Fried Rice for dinner.


Since rice is a staple with every Asian household meal, this is a typical way to recycle leftover food. It's super easy.  Just chop up all the meat and add it to a pan with sauteed garlic and onions.  Add the cooked rice, some soy sauce, pepper, and you're done.  I usually toss in some peas, carrots, and a little scrambled egg to the mix.  Tonight, I didn't have any carrots, so I used some leftover sauteed summer squash instead.

I pan-steamed some broccoli florets with oyster sauce to complete the meal.
